What is Biltong? It’s air-dried and cured meat, typically made from either beef or wild game found in the southern regions of Africa. It’s often marketed as a novelty product, but it is not. It’s actually cheaper to make than jerky, with the most expensive ingredient being the meat itself. The rest of the recipe is very basic and straight forward.
Though its origin is often wildly speculated upon and debated to this day – ranging from meat being strapped underneath a horse’s saddle, where the salt in its sweat is said to have preserved and cured it, or hung from clothes lines on the backs of wagons – its primary purpose is undisputed: preservation of meat, and it’s a delicious snack to boot.

Custom Biltong Boxes (Wood)
A drying box specifically made for Biltong is what is commonly referred to as a “Biltong Box”. Some design aspects arguably make them more distinct from other more regular drying cabinets. These boxes tend to be primarily used by people who, in one way or another, experienced Biltong and now want to make it themselves, but don’t live in a similar climate where it would be viable to hang the meat outdoors or in a shed, or maybe they simply lack the space. There are various ways to make one, ranging from almost free to wildly expensive, depending on your level of skill, access to materials, or how much you are willing to spend. There are stores and websites dedicated to making these, though I’d consider buying one rather as a last resort for those that either can’t, or are simply unwilling to put in the time and effort to make a box of their own. Honestly, I say you should at least give it a try first – it doesn’t have to be a fancy box. Simple will do.

As a hobbyist woodworker, I’ll always recommend to go with wood first and foremost, though this isn’t a matter of personal bias towards the material, but rather because it’s sustainable, recyclable, environment-friendly, and it offers inherent “mechanical” advantages.
Metalworkers might prefer to make theirs from steel, or 3D printer enthusiasts might prefer to make theirs from plastic. There’s no written or unwritten rule on what has to be used – it’s a matter of preference.
The most commonly used type of material appears to be plastic, mainly due to how cheap and easily accessible it is. But, given how our world is already drowning in plastic, I’m heavily biased against the use of plastic boxes.
Should you still decide to convert a simple storage box into your next Biltong drying device, I strongly recommend you research very thoroughly beforehand. Microplastics aside, using the wrong type of plastic could also potentially cause cancer from chemical fumes. Be careful and make sure that the material used to make the plastic container is of the food-safe variety, i.e. PTFE, PET, PP.
Wood is, in my opinion – well, not only in my opinion but also scientifically verified – arguably the best material you could use here. It inherently draws moisture away from the surface, which bacteria need to survive, and thus makes for excellent cutting boards. Some types of wood also have antimicrobial oils/substances inbetween their fibres, i.e. as found in oak or pine, making it an even more potent candidate for this purpose.
Same principle applies when building your own custom Biltong Box. The wood can make up for minor fluctuations in your setup by allowing the box to breathe, so to speak, drawing moisture from the air and expelling it outwards. This makes it difficult for moisture to settle on the surface. Assuming that you are not storing your box in a very humid environment with (perhaps) mold spores floating around, it’s absolutely the best at preventing mold in the first place. Keep in mind that wood needs to be able to dry out again, or else it cannot do what it’s supposed to.
Should you decide to stick with wood – great choice, by the way! – I recommend the following:

• Spruce/Fir
• Pine
• Beech
• Oak
• Bamboo

Stainless steel is extremely sturdy, corrosion resistant and easy to (keep) clean, but also very expensive, thus typically not viewed as a suitable candidate. However, there are cheaper options available, such as aluminium or tin/sheet metal. Much less to worry about here when you buy a cheap metal storage box to convert into a dryer. Just be mindful that some metals or alloys, i.e. brass, may chemically react with acidic compounds such as vinegar.
The cheapest but least sturdy material would be cardboard. You can totally make a simple Biltong Box with it. Though, once again, be mindful of what kind of cardboard it is, so buy it brandnew and don’t reuse old boxes unless you are absolutely sure where they come from and what was stored in them. This is just a precaution. I recommend not to use old cardboard from something like coke can packaging, simply because it has definitely travelled in and out of various trucks, warehouses/storage facilities, exchanged hands multiple times, or was maybe even stored in filthy or chemical environments. It might be tainted without your knowledge – best to not use it under any circumstances. And don’t ever use cardboard that had non-food-safe products stored inside of it, doesn’t matter whether it was plastic wrapped. Just don’t.
Airflow Design
The image above demonstrates quite well what directional airflow looks like for each respective design. The vertical approach should always be preferred, in my opinion. It saves space and is overall more efficient.
Directional airflow matters because the production of Biltong uses processes called convection and evaporation. In simpler terms: warm air rises and liquid turns into gas. Your box design can positively or negatively influence these.
Before I started making my own Biltong, I did a ton of research, drew sketches on a whiteboard, and used my own logic to work out what the key points are. I determined that my best course of action would be to try and assist the drying process as much as possible. This is why I decided to go for a vertical design approach – well, that and because, as fate would have it, the panels I wanted to use had different dimensions than I was going for, which in the end turned out in my favor anyway.
My thinking was, since convection follows a natural pattern of flowing upwards, I should set my fan to extraction, so that there is as little disturbance as I can physically make it.
More design ideas:
Wind Flap Design
This is a design idea where the air current is more bundled. A solid wind flap, i.e. a piece of bent cardboard, above the intake hole, with a slight curve at the end, gently redirects the air. The lip (curve) prevents turbulence. The intake holes can be replaced by fans blowing inwards, but then the top fan should be removed (leave the hole).
Splash Screen Design
This design has a fan inside that is blowing the air around a so called splash screen that protects the fan from the drips. The one on the left has 2 intake holes on the sides. The one on the right has a single intake hole matching the exhaust, however, this design requires 20mm spacers on the underside of the box, to elevate it above ground level, for air intake.

Fan Size Comparison
Fan size matters (heh), because it affects airflow, and the latter is the most important variable in your setup. And when I say fans, I do mean your standard PC case fans. That is what we use, and for good reason, too. They consume very little power (around 1.5-3W) and offer pretty good air throughput.
You do not need much air movement and you absolutely do not want to have a fan blowing directly onto the meat. Never ever. Not only can it potentially contaminate it by directly blowing dust particles on it, but it also messes with the process and makes the meat closest to it dry much quicker, greatly increasing the risk of case hardening. This is why, regardless of which size you end up using, your fan should always be set to extraction – meaning to suck air out – and all you want is a gentle breeze. You do not need to have that fan spinning at high RPM. Use a thin strip of paper and hold it behind the fan. It should be barely visibly moving. If it’s being flung around like crazy, you have way too much airflow going on. This is mostly only true for boxes with a volume size of roughly up to 120L. If yours is bigger than that, you can increase the airflow a little to compensate. I didn’t have a box larger than that available to me.
140mm fans are in my opinion your overall best choice. They scale down better with lower voltage, are quieter, move more air and barely cost more. It’s also far less of a headache to tune them right, because they are inherently designed for case ventilation.
CFM, or m³/h, is a unit of measurement used to determine airflow. Basically, when you see this in a fan’s data sheet, it tells you the amount of throughput it has, as in how much air it can move within a given timeframe. CFM meaning Cubic Feet per Minute, which is mainly used in the US, but has been widely adopted as a common unit to use.
I have this very simple guideline, determined anecdotally, based on what I had available:

• 0.2-0.3 CFM per 1L of inside volume, though the median suggests closer to 0.26 CFM per 1L
• For a 120L box, this would mean that you are looking for 31-32 CFM

(Please note that these numbers are largely guesstimates and should not be taken at face value.)
Using the fan I had available, and cross-referencing with some charts from a professional reviewer, I was able to determine that my 12V fan had a range of 0.8-0.81 CFM per 1% of max RPM. Scaling down to 5V, which appears to be mostly linear, my 1900-2000 RPM (there’s always a slight variance and the manufacturer lists it at 1900 RPM) fan would be running at ~40% of max RPM, or around 800 RPM.
That translates into 0.8 * 40 = 32 CFM, which is a number supported by those charts and my personal experience.
When installing your fan, make sure to check the sides of the fan casing for two arrows. One determines the direction of airflow, and the other determines blade rotation. They usually look similar to this:
Sometimes, there might be only one arrow, or even none at all (as is usually the case with cheap knock-off fans). Remember to set the fan to extraction, meaning that the horizontal arrow should be pointing away from the box.
There also appears to be a correlation between air saturation rate and box volume in combination with airflow, meaning that volume plays a role in how much moisture the inside air can take before it stagnates, unable to take on any more because it’s fully saturated (highest possible humidity), while airflow seems to influence the rate at which this is possible. Ambient humidity and temperature play a role here, too, but I’m merely speculating. Unfortunately, I do not possess the means to test this in a scientific environment, nor do I have the necessary education to even attempt to formulate such a hypothesis.

Spacing
The inside of your box should ideally leave enough room around your meat so that you can easily move your hand around it. This may not always be an option, so try to have at least 2 fingers of space in all directions, though the area near the top should always have enough room to fit your hand. This creates a sort of air pocket that should help prevent stagnation when the box is slightly overcrowded, allowing more moisture to gather at the top near the exhaust, without being transferred back into the meat. Or rather, that’s my theory and the reason why I do this.
While it’s hanging, never let the meat touch the bottom, sides or any other components of your box. Never let any of the pieces touch each other. The only contact area should be the meat hook itself. Never let flaps of meat fold in on themselves. You can use toothpicks dipped in vinegar to pierce and stabilize those flaps. Never pierce the meat onto the rods directly and never pierce and hang it like a shish kebab. I recommend to have roughly 2 fingers of space between each piece in all directions.
I’d say a good size for a standard Biltong Box (for the average person) is around 80-120L of volume. You can go with 50-60L for smaller batch sizes and pieces. My own box (the oak one) has almost 120L of volume and I use it to make batch sizes ranging from 1.0-2.0kg, with a typical batch weighing around 1.2-1.3kg. With thicker pieces, I could probably go up to 2.5kg, but that would increase the humidity inside the box quite a bit. That’s probably a healthy limit for that size.

As a prerequesite, this guide assumes that you already have a few basic tools at your disposal, such as a drill, a hand saw/jig saw, screws and a screwdriver. Wood glue is optional here. You can build a basic box without it.
A very basic approach uses 5 equally sized spruce panels, with example dimensions of 800x300x18mm.
Tools
You want to cut 1 of those panels in half, as these two halves will serve as your bottom and top sides.
2 of the panels will form the left and right sides, 1 will form the back side, and the last one will form the door. That makes it 5 panels in total.
Box Assembly
To assemble it, first build a simple rectangular box shape, pre-drilling and screwing the bottom and top side panels to the left and right side panels as shown. Screw the back panel on. You should now have a basic box without a doolid.
Fan Hole Cutouts
Next, use the hole saw or a jigsaw or similar to cut out the holes for the fan and intake. An easy trick here is to hold the fan where you want it to go, mark out the mounting holes with a pencil, then draw a line from each corner. Where these meet in the center (forming an X), is where you want to set your drill. For the intake, measure roughly 12cm from the bottom edge and, centered horizontally, drill your hole there. You can use the same trick as before with the fan, to make it easier later to properly mount the mesh covers.

Meat Grain
Biltong is typically cut along the grain, following the long meat fibres. This is because it’s often served in slices, which is easier to do when cross-cut, and the slices then won’t break apart.
Cutting against the grain can be done if you prefer to tear your Biltong by hand, though this may present difficulties when hanging, due to the increased risk of tearing caused by the shortened meat fibres.
Both methods are viable based on preference, though cutting along the grain is the most common and widely accepted form of doing it.
For starting out, I recommend to go with what we call “Schnitzel” over here. Sliced beef, about the size of an average adult man’s hand, roughly 6-10mm thick. Comes pre-cut and vacuum-packed, found in your local grocery stores. You may know it as something else where you’re from. Each pack typically contains 4-5 slices, in total weighing around 500-600g. Cut the Schnitzels in half. Now you have 2 pieces ready for Biltong. For each batch I do, I tend to buy 2-3 packs.
There’s no need to tenderize/thin it out with a mallet, you are not making Schnitzel. There are people who swear on bicarbonate of soda as an additive to tenderize the meat beforehand and “neutralize the acid” of the vinegar, but there’s currently no scientific documentation about whether or not it adds anything specifically to dried meat. There’s documentation about tenderizing steak, but Biltong isn’t steak. I’d argue physics disagree, but then again, we also have people today that still believe that the earth is flat, so… On a related note, vinegar breaks down over time and evaporates, so unless you are soaking the meat for hours in a vinegar bath, a little bit of vinegar will not oversour the meat but actually add flavor to it. You also do not need to add controversial flavor enhancers such as MSG, an ingredient some also swear makes for “the best Biltong”.
There are a lot of bogus recipes out there. I once fell victim to a very popular one myself when I started out – so keep your wits about you when researching recipes. And please do not fall for the ridiculous marketing speak you may find on online stores, such as “tenderized steak” from “grass-fed beef” listed as “premium”, plastered with a ton of fake positive reviews. I can almost guarantee you wouldn’t be able to tell the difference between a €10 Schnitzel and a €70 steak when tasting the finished product.

Prepare all the spices, pans and whatnot beforehand. Decide on the container you want to use. It should have a flat bottom and should be large enough so that the meat is barely able to stack on top of itself. If you want to use a bowl that doesn’t have a lid, you’ll have to seal it with plastic wrap.
Before you cut anything, wash your hands with soap, then use some vinegar and clean your kitchen knife, cutting board and wipe the inside of the container you are going to use. If you need to touch something else after you have handled the meat, wash your hands and wash them again before you touch the meat.
Before you hang the meat to dry, properly clean your box first. Vacuum the inside and the mesh filters, give it a rub-down with some vinegar, wipe the rods, replace the paper towel, wash the meat hooks and let them soak in a glass of vinegar. You can use rubbing alcohol for cleaning instead, but then you’ll need to wait at least 15 minutes for it to fully evaporate, and you’ll have to turn on the fan and let the box ventilate before you use it.

Vinegar – and which type and acidity – is essential when it comes to Biltong, as it’s used to fight off botulism, a potentially deadly illness linked to the bacterium called Clostridium botulinum. With its low pH value, vinegar’s acidity prevents its growth and over time breaks it down, making the meat safe.
The acidity of the vinegar plays an important role here. It is strongly advised that you use vinegar with at least 5% acidity and to not dilute it with water. You won’t need much, but it has to be strong enough. Low acidity vinegar (below 5%) is not advised, as research has shown that the pH value is too high and the bacterium may survive it.
You can read more about it here. That article specifically refers to canned food, but it extends to Biltong as well.
Vinegar is not a strong disinfectant and needs more time to kill bacteria, so it is advised to apply it to the meat and then let it sit for at least 30 minutes. I personally do a roughly 24-hour cure in the fridge, though I don’t use much.
Low acidity (≤5%, as low as 4%) vinegar (caution):

• Malt Vinegar
• Cider Vinegar
• Rice Wine Vinegar

High acidity (≥5%, up to 10%) vinegar (safe):

• Balsamic Vinegar
• Sherry Vinegar
• White/Red Wine Vinegar
• Distilled White Vinegar

I’ve personally used 5% Apple Cider Vinegar thus far and have never fallen ill. Make sure to check the acidity level on the label. If there is none listed, do not use it! Unlabeled typically have 4% acidity, which is too low.
It’s worth noting that the main ingredients in Worcestershire Sauce are malt and spirit vinegar, both of which are listed to have at least 5% acidity, or at least for the one I use. Best to check online, if able. Some recipes use just that instead of vinegar, which is totally fine.

The basic essential spices for Biltong are salt, pepper and coriander. The primary use is obviously flavoring, but they also aid in the preservation of the meat and help prevent the growth of bacteria.
Other great candidates include:

• Cloves
• Allspice
• Nutmeg
• Fennel
• Aniseed
• Garlic
• Chili

Certain spices, such as coriander, nutmeg, cloves and allspice, have been scientifically tested and proven to provide notable antimicrobial effects. These are spices I personally like to use anyway, due to their great impact on flavor. Coriander, cloves, nutmeg and allspice make a great combination for a spice mix, provided you get the ratios right. Cloves in particular have a very intense flavor, so it’s recommended to use this spice in moderate amounts.
You will have to experiment with different spices to find what works for you; put a mix together and give it a taste before you apply it, to determine whether you like it, though it’s not guaranteed to work out the same in the end. Some spices lose intensity rather quickly, while others tend to develop intensity over time, i.e. chili, garlic or pepper.
Salt is not only essential for preservation, but it also adds flavor. I highly recommend to not use nitrate salt but sea salt instead. I am aware that the former is commonly used in processed meat products, but it also has a ton of controversy surrounding it. It’s been linked to increased risk of heart attacks, high blood pressure, diabetes and coronary artery disease. If you are already enjoying some sausages and maybe some bacon on the side every now and then, it’s probably best to not add even more of it to your body.
Aniseed and fennel both have very intense and quite noticeable flavor, so they should be used in very small amounts. However, both of them are said to be quite healthy spices with a lot of benefits.

Mold is your #1 enemy when it comes to Biltong. It can render all your efforts moot, if not caught and treated early.
If your meat is showing signs of white spots or specks, it’s likely mold. However, it could also just be salt crystals forming on the surface, as typically observed with too much salt content, or when the meat was dipped/soaked in a salt solution prior to hanging. Give them a light rub with your finger to determine whether it is mold or salt crystals.
If it’s soft, grinds into fine dust or has a web-like structure to it, it’s most definitely mold. If it’s rather solid, breaks up into smaller pieces and disappears from your finger after a while, it’s most definitely salt crystals. If you cut up the meat and see some white dots in the cross-section, let it rest for a couple minutes. Salt will dissolve and the spots will disappear if that’s the case. If they don’t, you got a serious problem going on and should not consume the meat. It could also potentially be fungi. When in doubt, rub some onto your finger and give it a lick. Don’t worry, such a small amount won’t (or at least shouldn’t) kill you or make you ill, but it will leave a bad taste in your mouth.
Either way, should you detect any of those, you need to locate the source of the problem:
If it’s salt crystals forming, you are likely using way too much salt. For reference, I use (at most) 3 teaspoons of sea salt for every 1 kg of meat. Reduce the salt content in your mix – your kidneys will thank you.
If it’s mold or fungi, you need to check the humidity and cleanliness of the room first, then adjust the airflow of your box. It might just not be enough. If that still doesn’t solve the issue, find a way to determine whether you have mold spores floating around in that room. Check the walls, creases, vents and cracks in the vicinity. Buy yourself a moisture meter if necessary. Disinfect the entire room or move the box elsewhere.
I’d argue that, most commonly, mold is caused by cross-contamination from inadequate preparation or improper kitchen hygiene routine. Your spice mix, in particular when doing a wet cure followed by a dry mix, could also be the problem. It could be contaminated without your knowledge, or it could be causing issues with drying by creating an insulating layer on the outside. My own observations online with reports of moldy Biltong were shown to be most often linked to the latter. Coincidence? I don’t think so. There’s definitely a correlation here that seems to support my theory.
That said, absolutely never ever (re)use a spice mix or vinegar that came in contact with raw meat or your unwashed hands.
You can always try and treat the mold on the meat with some vinegar, either by spraying or dabbing it on affected surfaces, but this method should only be applied when there’s only little surface level amounts of mold. If the meat is more or less already caked in it, vinegar might make it disappear for a while, but it should not be considered safe.

Case Hardening
When a hard layer forms on the outside of the meat, where the inside is still wet or raw, this is what is being referred to as “case hardening”. The above image illustrates this.
You want to avoid this because the moisture will be trapped inside and bacteria will break down the proteins over time, causing the meat to rot from within. What you should be looking for, in my opinion, is a slight gradient to evenly colored throughout, indicating that it has fully cured. This applies regardless of whether or not you prefer your Biltong wet or dry.
Speaking of which, some folks seem to share the opinion that “steak cut” (pink inside) Biltong is somehow superior or “perfect”, but they couldn’t be more wrong. The taste preference is largely subjective, of course, but the potential health risks are not. Biltong is not steak, so don’t treat it as such. At that stage, it is still very much raw and uncured meat. It will not taste like steak and it won’t have that kind of texture, as both stem from cooking/sizzling the meat in the first place. Steak is also consumed immediately afterwards, so any potential health risks from “medium rare” or “rare” steak are practically mitigated.
I was able to observe that, beyond a certain thickness, the expected drying time drastically increases and is not linear, as you might have expected. Meaning, a 40mm thick piece may not have 4 times the drying time of a 10mm thick piece, but potentially quite a lot longer. For reference, my 6-10mm thick pieces are fully cured and ready to eat within 3-4 days, which would suggest a drying time of about 14 days (on average) for a 40mm piece, though it’d probably take closer to around 18-21 days.

Basic Recipe

• 1 kg raw beef
• 3 tsp. salt
• 2 tsp. pepper
• 8 tsp. coriander seeds
• 50 ml brown vinegar

Cut the meat into rectangular strips (6-8mm thick) along the grain, put it in a bowl and coat it with the vinegar. Give it a light mix with your hand.
Crush the coriander seeds with a mortar and pestle, add the rest of the spices, then pour the spice blend all over the meat. Now mix everything thoroughly by hand, until the meat is evenly covered.
Seal the container and let the meat cure in the fridge for 24 hours. Give it a shake every few hours, so that all the pieces can soak in the brine for a while.
Hang to dry for 4-6 days or more.

• What temperatures and humidity should I be aiming for?

Where Biltong is from, the average drying temperature and ambient humidity ranges from 25-35°C and 20-30%.
That said, where I’m from, these numbers are closer to 15-25°C and 40-50%. I started making Biltong in the early summer, where my ambient room temperature and humidity was ranging from 25-35°C and 45-55% most of the time, and I’ve made some even on rainy days, where we had upwards of 65% humidity. At the time of writing this, it is almost winter, and those numbers are now in the realms of 18°C and 50%. And I’m still making my own Biltong without a hitch, with the same box, using the same method. Not a single case of mold.
If you are living in an area where the ambient humidity is really high at all times (>65%), I recommend you add a 20-30W – maybe even up to 40W, but no higher! – standard light bulb with a poor energy rating (E-G) to your box (as a heat source). The rating tells you its energy efficiency, and if you want it as a heat source, you need one that technically wastes energy in the form of heat radiation – or you need to buy some type of heat lamp (they more or less do the same thing, but actually on purpose). Do not use anything that gets hot enough to be able to actively burn things, or else you’d be creating a literal fire hazard! You also do not want to cook the meat, which can happen if your bulb gets too hot. You do not need a lot of heat!

• How do I catch the drips in my box?

This is actually a very simple problem to solve. Use a sheet of aluminium foil (to prevent stains) and place it at the bottom of your box, directly underneath the meat. Put a paper or kitchen towel on top of it to catch the drips. The latter is reusable and can be washed. You do not want to have puddles of meat juice forming that become a breeding ground for bacteria, which is why you should add something that absorbs the liquid (to disperse the moisture), hence the towels.

• How can I tell when my Biltong is ready?

Depending on the thickness and size, and also your personal preference, Biltong is typically ready to eat within 4-6 days after hanging. What you are looking for is a weight reduction of at least 50% after a couple days. For this, you have to weigh each piece prior to hanging (best to weigh with the meat hook) and document it, then weigh it again and subtract the difference.
For wet/soft Biltong, you should be aiming for 50-60% weight reduction, 60-65% for dry, and above 65% for very dry. I prefer mine bone dry (if it survives that long, lol), as in fully dried out. I’d argue that people who think that Biltong needs to be wet probably never had proper dry Biltong. Once fully dried out, you can also grind/break it up into smaller chunks and sprinkle it onto buttered bread or mix it into mieliepap (corn porridge). It’s really good.
You can also do the pinch test. Wash your hands first, then give the meat a light squeeze with two fingers. If it’s relatively squishy, it’s not yet ready. If it is firm but still soft, you can cut off a small piece and inspect the cross-section (refer to the case hardening section above). If you confirm that it isn’t ready, rub or spray the open cut and areas you touched with some vinegar and sprinkle a bit of salt on the open cut, then put it back into the box.

• How long before my Biltong goes bad?

Assuming the conditions allow for it, you can let the meat hang inside the box easily for several weeks (leave the fan on), maybe even months. For safety reasons, I leave my Biltong hanging inside the box for up to 4-6 weeks and not any longer. The climate and air quality here is vastly different from Namibia, so I prefer not to take unnecessary risks.
You can also vacuum-seal and store it in a freezer, though I’d recommend you then consume it within 12-15 months. Speaking of which, if you need to thaw your Biltong, only let it thaw in the fridge. Keeps the moisture inside where it belongs and prevents it from preemptively spoiling.
You should only ever store whole pieces of Biltong and cut it up when needed. The worst way to store it is in slices. Adds a lot of surface area that makes it prone to contamination.
If you want to store it in the fridge for a couple days, put it inside a closeable container with a paper towel inside. Evens out the moisture and flavor, and prevents condensation. You can use this trick in reverse to rehydrate dried out Biltong, simply by adding a few drops of water on said paper towel, then letting it sit in the fridge like this for 1-2 days.
Unironically, dried out Biltong stored inside a Biltong Box (with the fan on) will last far, far longer than when stored in a fridge. Generally speaking, if you are gonna store it in the fridge not vacuum-packed, eat it within a week or so.

I’ve been reading up on modern sail ships and asking questions while working on some solarpunk sailing artwork. At this point, I think I have gathered enough information that it might be useful to someone else.
So if you want to include ships in your solarpunk story (even just mentioned in the background) or you’re looking for references for some artwork, take a look. I’m very much not an expert, but I’ve been pestering some of them, and collecting examples from the internet and doing my best to organize it. Hopefully this by-laymen-for-laymen approach will help make it accessible without leading you astray.
One thing to note up front: there’s a ton of variety here. Historical nautical terminology is remarkably chaotic – probably because most of it predates manufacturing practices that involved standardization. Highlights include the fact that ships can be classified based on size, sail plan, rigging, hull type, how they’re used, some combination thereof, or whether they have a figurehead or not. Modern sail-based freight shipping is still very new and I get the impression that the industry as a whole is sort of picking up old ideas and new ones and trying them in different combinations to see what fits. There are very few finished examples underway out in the world and I’m not sure we’ll know what designs are the absolute best for which use cases until a lot more ships have been launched and put to work.
That said, I think we’re definitely going to see a resurgence of sail and it seems like there’s a decent amount of interest and enthusiasm in the industry, even if many are understandably nervous about making huge changes when those changes involve incredibly expensive ships.
It’s the original zero-carbon (-ish, they deforested huge amounts of land and destroyed entire habitats to build ships back when) shipping and transportation system. We had the technology to move cargo and passengers using the wind to directly do most of the work, and we have the technology (metal hulls, automated rigging, satellite navigation systems, radio, etc) to do it much more safely than our ancestors could. Even if a shipping company isn’t motivated by regulations or pure environmental reasons, oil will get more expensive eventually and that will cut into the profitability of giant motor vessels.
Modern day shipping is extremely cheap but only when you limit the metrics you track to money. When you account for the pollution, the waste, it gets a lot harder to justify. A huge part of keeping modern day cargo shipping cheap is using the absolute worst fuel (bunker fuel, tar-like stuff left over after distilling and cracking petroleum, which is contaminated with everything the fuel they were actually making couldn’t include), as soon as they hit international waters.
I think a solarpunk society is one that cares about externalities.
I genuinely like the optimization and logistical advantage of using standardized, stackable shipping containers which fit on ships, trucks, and trains without the need to load and unload the cargoes by hand at each transition in their journey. That’s great stuff, no complaints.
What I wonder about is if the cost efficiency brought by combining containerization with ever-more-massive, bunker-fuel-burning ships has caused other problems. We ship cargo all over the world but much of the time, we do it because it’s so cheap to do so. Many of those containers are full of cheap tat that ends up in landfills after one use or no use at all. We ship raw material from one continent to process it on another, we ship that material to another so it can be shaped into parts, which are shipped away for partial assembly on another continent, and then again for final assembly. Is that efficient? It’s cost efficient. But we burn terrible amounts of fuel each time we do it, and we do it for so many things.
When you read through the handful of real sail ships operating today, a theme becomes somewhat clear – these early (for profit) ones at least are primarily transporting the same high-value or location-specific cargoes sail ships were carrying a hundred years or more ago. Wines, champagnes, and other liquors, raw coffee, raw cocoa, luxury goods like that. This is partly because they need to justify the up-front cost of standing up a whole new kind of shipping, because they’re often slower, and because there are already crew shortages even before getting into the specialized skillsets related to sailing by wind. So they’re currently prioritizing the kind of specialty products (that only grow in certain climates or need special skills or reputation to produce) that exist in one place with markets in others, where they can markup for greener shipping. As they expand, the range of products will no doubt expand as well – cargo ships used to carry all kinds of stuff. But even with massive fleets (to make up for the fact that it’ll be hard to make single ships as big as we have now for reasons I’ll get to) we probably won’t see shipping done as cheap as it is today. Generally I think this lines up well with solarpunk principles like building to your local environment using local materials, manufacturing things locally, and building them to last and to be repairable. Shipping would fit the things that have to come from somewhere else.
I think it’s safe to say that almost any ship is going to be some kind of hybrid between motor vessel and sailing vessel. What ratio of wind to other energy (electricity, biodesiel, hydrogen, bunker fuel) is up to you. I will say there’s potential for a timeline here, starting with the majority being modern-day cargo ships with sails bolted on saving around 20% of their fuel, and transitioning towards more numerous, smaller ships using more and more wind, until the bulk of the fleet is primarily-sail ships with auxiliary motors or engines for maneuvering in port and dealing with emergencies. And chances are good that ships from all over that spectrum will be sailing at the same time.
We should cover the current landscape a little so you know what the new stuff is competing with or building on.
Most of the sites I’ve read break cargo ships into a few big categories:
Container ships:
These are apparently the most common and probably for good reason. The convenience and efficiency of shipping containers allows for some real benefits. Cargo can be packed into a 20′, 40′ and 45′ long container, transported by truck or train to a port, loaded onto a ship, transported to another continent, lifted onto trains and trucks and not actually unpacked until it reaches its destination. When the alternative is people physically carrying stuff onto the ship and packing it into the hold, and carrying it out and packing it into a truck, you can see where there’d be some advantages. (Palatalized cargo is a sort of great middle ground that allows for better weight distribution in the hold (you want the heaviest stuff near the bottom so the ship is stable) and can be loaded very similarly to how containers are (you move the entire pallet, so it doesn’t get unpacked until it reaches its destination) but that’s not super relevant at the moment.)
The big modern container ships can transport 85 TEUs (twenty equivalent units) to 15,000+ depending on their size. So far the biggest primarily-sail design I can find can haul 100 TEU containers.
Putting sails on these is kind of difficult because they use the deck for cargo space and will have cranes loading and unloading containers whenever they’re in port. Apparently this isn’t as big an issue as I expected, but it’s still something to keep in mind, especially if there’s tons of rigging involved in the design of the sails.
There’s a ton of designs out there for adding big easy-to-use sails and kites to existing container ships in order to boost their efficiency and cut fuel use somewhat. They’re in use now and have some good info if you’re looking for hard numbers. I haven’t really covered them in these notes much.
I find container sailships to be the most interesting (something about the mix of old and new, and the fact that containers make the ship’s purpose visually clear) so I’ve got a bunch of examples of them below.
Roll-on roll-off ships:
These ships are used to transport wheeled cargo, things like private cars, industrial vehicles, buses, trucks, construction equipment, excavators, etc. They usually have a huge door in the side or stern and the vehicles can directly roll on and off the vessel. They seem to be a popular choice for full-sail cargo ships because they don’t need to worry as much about keeping the decks clear for loading and unloading. How well they’ll fit in a solarpunk world is up to you – some vehicles and wheeled equipment will undoubtedly have to be transported overseas but whether there’ll be enough to justify this class of ship is up to you. Neoline is a good primarily-sail example of this type, Norsepower is a more traditional primarily-fuel version.
Dry Bulk Carriers:
These transport solid non-packaged loose dry cargo in bulk quantities. Think wheat/grain, chemicals for fertilizer, cement, wheat, sugar, coal, iron ore etc. Some of the last sail vessels in operation were bulk carriers, like the Flying P-Liners, some of which were still transporting nitrates in the 1950s. Most of the modern sailships listed below seem to do at least some of this.
Tankers:
These ships transport large amount of liquid cargoes like petroleum products (oil, gas), chemicals, wine, juice, etc. in bulk. They are probably a good fit for a wider range of sail types since they don’t need to worry as much about keeping the decks clear for loading and unloading.
Reefer ships:
(Short for refrigerator) they’re designed to transport frozen/temperature-controlled cargoes, mainly in refrigerated containers. Food and perishable goods (fruits, vegetables, meat, fish…). I don’t have much info on these (except that I think a lot of the container examples should apply). I do suspect these would be one of the most challenging as they’ll need a lot of power onboard.

This is a simplified summary, there are definitely details I left out that you can find over there.
What kind of sails do you need?
The most obvious (to most of us) difference between motor vessels and sail vessels is the huge masts and sails on top. For cargo vessels, they seem like they should pose huge issues for cranes in the ports (in the case of containerized shipping) but apparently this isn’t as much of an issue with larger and more modern crane designs as I would have expected. The modern cranes lift their booms to allow tall structures past, then lower them to the working position. Apparently they already work right up alongside tall structures on modern cargo ships so masts should be similar.
Where masts pose a problem is with going under bridges. Bridges often block ports and rivers where sail ships would like to enter. Most all of our modern bridge and port infrastructure was built in the days after tall ships had been replaced by steam and motor vessels, but that means there are trillions of dollars worth of port infrastructure that would be blocked to anything with a mast.
This has been a major motivator for folding mast designs. Some sails are better suited to folding masts than others, so consider the routes and ports your ship would likely see, and whether it would need to get past bridges. Consider bridge height, the height of the mast normally associated with your ship height, and whether the mast needs to fold. If it does, consider which sails are well-suited to doing so.

• Several modern/proposed designs like the Windcoop or Neoliner use rigid sails on masts that can apparently fold down.
• Of the more traditional designs, junk rigs / Chinese lug sails / fully battened lug sails seem to be the best candidate for a folding mast and are apparently pretty easy to use. Hasler & McLeod for more info. They may use curved battens that flip to orient the curve towards the tack in order to make close-hauled upwind performance comparable to that of a bermuda rig. If you need to understand those terms in order to write your story at the correct level of detail, you probably either know them already or are about to dive in to the world of nautical terminology, in which case best of luck! • Lateen or “crab claw” varieties fold fine. Unfortunately they’re not very efficient upwind.
• I’m told a bermuda main sail with in-boom furling is also conceivably compatible with a folding mast but that hasn’t been done yet.

Water draft/how deep is the ship below the waterline?
Water draft is another major consideration for port entry. Ports and rivers are shallower than the open ocean and sailing vessels with reasonably good performance will have a deeper draft than an equivalent motor vessel. This is for two reasons that I think basically sum up to ‘preventing the sails from tipping the ship over’ and ‘preventing the wind from pushing the ship sideways’:

• Ballast weight – the lower they can hang the ballast, the lower the vessel’s center of gravity. This makes it more stable against the tendency of the sails to pull it over onto its side.
• The protruding part under the hull acts as a wing in the water, producing horizontal lift. This counteracts the sideways component of the forces generated by the sails when traveling upwind, or even perpendicular to the wind. Having this makes the ship safer by helping prevent it from getting pushed onto shores, rocks, and reefs by unfavorable winds. This extra lateral area is going to stick out way under the hull for hydrodynamic reasons.

To allow them to enter these ports, modern sail ships might use lifting keels or have a flatter bottom, no keel fin, with daggerboards to provide that control while being able to lift up and cross into shallower water.
How tippy is it?
Motor vessels can make do with a higher center of gravity and much lower angle of vanishing stability (AVS). This is the point at which the vessel will capsize and stay inverted, thus sinking it. That’s because they don’t have sails making it easy for the wind to tip them. Sailing ships tend to lean more while underway, so they can’t pile containers as high.
Containers also don’t allow for the cargo to be packed quite as densely, or apportioned particularly well within the vessel from heavy to light as you go upwards compared to other systems. You just get what you get. Heavier containers can be placed lower, but the overall packaging density is less so the center of gravity still ends up higher than with more piecemeal loading methods. Palletization is a good compromise that can still load a sizable vessel in acceptable time. So while there’s a bunch of interesting container sailboat designs, I think we probably won’t see something equivalent to the absolutely massive cargo ships transporting thousands of containers.
However, this is another place where folding masts can help – being able reef the sails and tip them down during bad weather provides additional stability/safety so the ship can be loaded to a higher center of gravity.
This is a list of new, operating, and proposed sailship designs. I’m going to sort them from less-traditional to more-traditional as determined by me (a person who learned most of this terminology a week ago). There are a lot of traditional sailboat designs seeing a resurgence, with various modernizations ranging from basic stuff like metal hulls, on-board motors, and modern navigation and communication equipment, to fancier stuff like automated sails on rotating masts.
The Windcoop container ship – this one has heavily-automated sails with very little rigging, making it easier to load and unload cargo. It can haul 100 TEUs which is the highest number I’ve found so far. At time of writing, neither has been revealed or launched.
Neoliner – cosmetically similar to Windcoop (I think, anyways), this is a roll-on roll-off cargo ship with heavily automated sails which can fold down to go under bridges. This has also not launched yet.
The Anemos, an 81-meter ‘Phoenix’ class ship (I can’t find an equivalent historical type) with a thousand-ton capacity and some automation on the sails. It’s currently transporting cognac, champagne, coffee, and other high-value cargoes.
The SV Juren AE a 48-meter cargo vessel with an Indosail-Sailing Rig and a 300-ton capacity. It looks much more like modern ships to me, and has an interesting frame rig on the structure near the stern covered in solar panels. A few other ships have used the Indosail rig, including one of Greenpeace’s Rainbow Warrior Ships (I think the one the french didn’t blow up?).
The Harryproa (and any other cargo proa designs). These use hull designs borrowed from the outrigger sailing canoes of the Pacific Islands. Made from fiberglass using simple, modular molds, they’re intended to be easy to build and repair. One hull is intended to transport up to 10 tonnes of cargo in modular containers, while the other holds the crew quarters and ferry seating space for 25 passengers. It has a built-in tender (small boat) for reaching areas the main ship can’t, and for powering the main ship when it needs it. I didn’t notice any mention of being able to lower the masts, but some other tall ships, like the USCG training vessel Eagle (a three-masted barque), have upper mast sections that can be lowered to squeeze under modern bridges so that might be an option.
The SV Kwai for an example of a motor vessel retrofitted with fairly traditional sails. This allowed it to visit ports that weren’t considered profitable for motor vessels. A reuse-focused solarpunk society might make a lot of similar retrofits.
Sailcargo – a company operating a small fleet of wood-hulled schooners. They have a fair number of photos to use as references, including some clever solar panel placement.
Tres Hombres – about as traditional-looking as it gets – an engineless, wood-hulled brigantine made in the 1940s transporting rum, cocoa, coffee and olive oil.
Vega – (a looks like either a galleass or a cutter?) built in 1892 and formerly used to transport limestone, bricks, pig iron and cement, it is still in use today, transporting free school and health supplies to remote islands in eastern Indonesia and to East Timor. River Sailboats – here’s a few examples (real or proposed) which would operate on large rivers like the Hudson, hauling cargoes or passengers. (Here’s a neat worldbuilding idea I found in the IWSA Small Windships Publication – the term ‘Sail Freight’ is apparently more common in the US while Sail Cargo is more common in Europe – both terms seem to have gained popularity independently, but in the US it was mostly in the context of rivers and coasts while in Europe it seems to be more about ocean cargo. It wouldn’t be unreasonable for sail freight to come to mean transporting cargo on rivers (competing with trucks and trains) while sail cargo ends up referring to the ocean.)

Like the ships, these smaller watercraft will likely need some kind of motor for tight maneuvering, emergencies, lack of wind, and to work as their primary power in some canals (similar to the old sail-driven canal barges (sailboats intended to lift dagger boards and drop masts when they get to the canal but able to operate as sailboats outside it). Perhaps these could even operate as trolly boats using overhead wires for power when they get to the canal so they wouldn’t require dense onboard energy storage.
Other types of vessel
This post is mostly about cargo but there’s a ton of sail-based passenger stuff out there. I’ve gathered a few examples and will add more as I find new ones:
A company called Star Clipper is operating three tall ship cruise ships, Star Flyer, Star Clipper, and Royal Clipper. These look like older style clipper ships to me so they might actually be using mostly wind. They seem to be very much operating in the cruise ship format, probably with some associated issues, but they demonstrate that passenger liners could still be viable (and can be quite comfortable) if a change in pace of life or available resources reduces the number of airplanes for that kind of travel.
Seacloud, another sail-based cruise ship
A company called WindStar Cruises also operates a series of cruise-ship-sized ‘motor sailing yachts.’ These have sails but I don’t think these actually rely much on wind, at best I suspect they’re closer to the cargo ships with rotary sails bolted on to save some fuel. One of the naval architects on reddit seemed to confirm this.
There are also smaller crafts such as the 38-meter Schooner Mary Day which can carry 28 passengers. This may be duplicate with the schooner example from the Hudson above, but it still represents the potential for sail-based water buses on both rivers and coasts.
River and harbour cleanup boats like Mr. Trash Wheel (even if you hope a more solarpunk society would have less plastic trash, storms and floods can wash all kinds of non-trash stuff into the rivers).

Whale Safety
Whales are sometimes hit by ships (they sleep just below the surface and don’t know where human shipping lanes are). Some hulls are more dangerous to them than others. Ships with steep, sharp prows and bulbous bows are especially dangerous for whales. If you search for ship hulls and whale safety, you’ll find an unfortunate number of photographs of dead whales draped over those bulbs.
One suggestion is to follow some cargo ferry designs and design the prow of the ship so it’s more traditional, angled forward so the deck is further forward than where the hull meets the waterline, with no bulb below the surface, and a much more rounded/blunt bowstem. This design will likely lose some performance benefits while underway but if it hits a whale I guess it’s more likely to sort of dunk them rather than to slam into them like an axe.
There are also ongoing attempts to map our whale activity and to ensure that human crews are both aware of their presence and actually making efforts to avoid them, but if you’re looking for visuals this might be worth considering.

If you want to include ships in your solarpunk story (even just mentioned in the background) or you’re looking for references for some artwork, this collection of notes might be able to help. I’m very much not an expert, but I’ve been pestering some of them, and collecting examples from the internet and doing my best to organize it. Hopefully this by-laymen-for-laymen approach will help make it accessible without leading you astray.
One thing to note up front: there’s a ton of variety here. Historical nautical terminology is remarkably chaotic – probably because most of it predates manufacturing practices that involved standardization. Highlights include the fact that ships can be classified based on size, sail plan, rigging, hull type, how they’re used, some combination thereof, or whether they have a figurehead or not. Modern sail-based freight shipping is still very new and I get the impression that the industry as a whole is sort of picking up old ideas and new ones and trying them in different combinations to see what fits. There are very few finished examples underway out in the world and I’m not sure we’ll know what designs are the absolute best for which use cases until a lot more ships have been launched and put to work.
That said, I think we’re definitely going to see a resurgence of sail and it seems like there’s a decent amount of interest and enthusiasm in the industry, even if many are understandably nervous about making huge changes when those changes involve incredibly expensive ships.
It’s the original zero-carbon (-ish, they deforested huge amounts of land and destroyed entire habitats to build ships back when) shipping and transportation system. We had the technology to move cargo and passengers using the wind to directly do most of the work, and we have the technology (metal hulls, automated rigging, satellite navigation systems, radio, etc) to do it much more safely than our ancestors could. Even if a shipping company isn’t motivated by regulations or pure environmental reasons, oil will get more expensive eventually and that will cut into the profitability of giant motor vessels.
Modern day shipping is extremely cheap but only when you limit the metrics you track to money. When you account for the pollution, the waste, it gets a lot harder to justify. A huge part of keeping modern day cargo shipping cheap is using the absolute worst fuel (bunker fuel, tar-like stuff left over after distilling and cracking petroleum, which is contaminated with everything the fuel they were actually making couldn’t include), as soon as they hit international waters.
I think a solarpunk society is one that cares about externalities. I genuinely like the optimization and logistical advantage of using standardized, stackable shipping containers which fit on ships, trucks, and trains without the need to load and unload the cargoes by hand at each transition in their journey. That’s great stuff, no complaints.
What I wonder about is if the cost efficiency brought by combining containerization with ever-more-massive, bunker-fuel-burning ships has caused other problems. We ship cargo all over the world but much of the time, we do it because it’s so cheap to do so. Many of those containers are full of cheap tat that ends up in landfills after one use or no use at all. We ship raw material from one continent to process it on another, we ship that material to another so it can be shaped into parts, which are shipped away for partial assembly on another continent, and then again for final assembly. Is that efficient? It’s cost efficient. But we burn terrible amounts of fuel each time we do it, and we do it for so many things.
When you read through the handful of real sail ships operating today, a theme becomes somewhat clear – these early (for profit) ones at least are primarily transporting the same high-value or location-specific cargoes sail ships were carrying a hundred years or more ago. Wines, champagnes, and other liquors, raw coffee, raw cocoa, luxury goods like that. This is partly because they need to justify the up-front cost of standing up a whole new kind of shipping, because they’re often slower, and because there are already crew shortages even before getting into the specialized skillsets related to sailing by wind. So they’re currently prioritizing the kind of specialty products (that only grow in certain climates or need special skills or reputation to produce) that exist in one place with markets in others, where they can markup for greener shipping. As they expand, the range of products will no doubt expand as well – cargo ships used to carry all kinds of stuff. But even with massive fleets (to make up for the fact that it’ll be hard to make single ships as big as we have now for reasons I’ll get to) we probably won’t see shipping done as cheap as it is today. Generally I think this lines up well with solarpunk principles like building to your local environment using local materials, manufacturing things locally, and building them to last and to be repairable. Shipping would fit the things that have to come from somewhere else.
I think it’s safe to say that almost any ship is going to be some kind of hybrid between motor vessel and sailing vessel. What ratio of wind to other energy (electricity, biodesiel, hydrogen, bunker fuel) is up to you. I will say there’s potential for a timeline here, starting with the majority being modern-day cargo ships with sails bolted on saving around 20% of their fuel, and transitioning towards more numerous, smaller ships using more and more wind, until the bulk of the fleet is primarily-sail ships with auxiliary motors or engines for maneuvering in port and dealing with emergencies. And chances are good that ships from all over that spectrum will be sailing at the same time.
We should cover the current landscape a little so you know what the new stuff is competing with or building on.
Most of the sites I’ve read break cargo ships into a few big categories:
Container ships:
These are apparently the most common and probably for good reason. The convenience and efficiency of shipping containers allows for some real benefits. Cargo can be packed into a 20′, 40′ and 45′ long container, transported by truck or train to a port, loaded onto a ship, transported to another continent, lifted onto trains and trucks and not actually unpacked until it reaches its destination. When the alternative is people physically carrying stuff onto the ship and packing it into the hold, and carrying it out and packing it into a truck, you can see where there’d be some advantages. (Palatalized cargo is a sort of great middle ground that allows for better weight distribution in the hold (you want the heaviest stuff near the bottom so the ship is stable) and can be loaded very similarly to how containers are (you move the entire pallet, so it doesn’t get unpacked until it reaches its destination) but that’s not super relevant at the moment.)
The big modern container ships can transport 85 TEUs (twenty equivalent units) to 15,000+ depending on their size. So far the biggest primarily-sail design I can find can haul 100 TEU containers.
Putting sails on these is kind of difficult because they use the deck for cargo space and will have cranes loading and unloading containers whenever they’re in port. Apparently this isn’t as big an issue as I expected, but it’s still something to keep in mind, especially if there’s tons of rigging involved in the design of the sails.
There’s a ton of designs out there for adding big easy-to-use sails and kites to existing container ships in order to boost their efficiency and cut fuel use somewhat. They’re in use now and have some good info if you’re looking for hard numbers. I haven’t really covered them in these notes much.
I find container sailships to be the most interesting (something about the mix of old and new, and the fact that containers make the ship’s purpose visually clear) so I’ve got a bunch of examples of them below.
Roll-on roll-off ships:
These ships are used to transport wheeled cargo, things like private cars, industrial vehicles, buses, trucks, construction equipment, excavators, etc. They usually have a huge door in the side or stern and the vehicles can directly roll on and off the vessel. They seem to be a popular choice for full-sail cargo ships because they don’t need to worry as much about keeping the decks clear for loading and unloading. How well they’ll fit in a solarpunk world is up to you – some vehicles and wheeled equipment will undoubtedly have to be transported overseas but whether there’ll be enough to justify this class of ship is up to you. Neoline is a good primarily-sail example of this type, Norsepower is a more traditional primarily-fuel version.
Dry Bulk Carriers:
These transport solid non-packaged loose dry cargo in bulk quantities. Think wheat/grain, chemicals for fertilizer, cement, wheat, sugar, coal, iron ore etc. Some of the last sail vessels in operation were bulk carriers, like the Flying P-Liners, some of which were still transporting nitrates in the 1950s. Most of the modern sailships listed below seem to do at least some of this.
Tankers:
These ships transport large amount of liquid cargoes like petroleum products (oil, gas), chemicals, wine, juice, etc. in bulk. They are probably a good fit for a wider range of sail types since they don’t need to worry as much about keeping the decks clear for loading and unloading.
Reefer ships:
(Short for refrigerator) they’re designed to transport frozen/temperature-controlled cargoes, mainly in refrigerated containers. Food and perishable goods (fruits, vegetables, meat, fish…). I don’t have much info on these (except that I think a lot of the container examples should apply). I do suspect these would be one of the most challenging as they’ll need a lot of power onboard.

The Anemos, an 81-meter ‘Phoenix’ class ship (I can’t find an equivalent historical type) with a thousand-ton capacity and some automation on the sails. It’s currently transporting cognac, champagne, coffee, and other high-value cargoes.
The SV Juren AE a 48-meter cargo vessel with an Indosail-Sailing Rig and a 300-ton capacity. It looks much more like modern ships to me, and has an interesting frame rig on the structure near the stern covered in solar panels. A few other ships have used the Indosail rig, including one of Greenpeace’s Rainbow Warrior Ships (I think the one the french didn’t blow up?).
The Harryproa (and any other cargo proa designs). These use hull designs borrowed from the outrigger sailing canoes of the Pacific Islands. Made from fiberglass using simple, modular molds, they’re intended to be easy to build and repair. One hull is intended to transport up to 10 tonnes of cargo in modular containers, while the other holds the crew quarters and ferry seating space for 25 passengers. It has a built-in tender (small boat) for reaching areas the main ship can’t, and for powering the main ship when it needs it. I really appreciate the diagrams they provide with each ship description and feature list. I don’t think any of these have been built yet but they’re based on historical designs. I didn’t notice any mention of being able to lower the masts, but some other tall ships, like the USCG training vessel Eagle (a three-masted barque), have upper mast sections that can be lowered to squeeze under modern bridges so that might be an option.
The SV Kwai for an example of a motor vessel retrofitted with fairly traditional sails. This allowed it to visit ports that weren’t considered profitable for motor vessels. A reuse-focused solarpunk society might make a lot of similar retrofits.
Sailcargo – a company operating a small fleet of wood-hulled schooners. They have a fair number of photos to use as references, including some clever solar panel placement.
Tres Hombres – about as traditional-looking as it gets – an engineless, wood-hulled brigantine made in the 1940s transporting rum, cocoa, coffee and olive oil.
Vega – (a looks like either a galleass or a cutter?) built in 1892 and formerly used to transport limestone, bricks, pig iron and cement, it is still in use today, transporting free school and health supplies to remote islands in eastern Indonesia and to East Timor. River Sailboats – here’s a few examples (real or proposed) which would operate on large rivers like the Hudson, hauling cargoes or passengers. (Here’s a neat worldbuilding idea I found in the IWSA Small Windships Publication – the term ‘Sail Freight’ is apparently more common in the US while Sail Cargo is more common in Europe – both terms seem to have gained popularity independently, but in the US it was mostly in the context of rivers and coasts while in Europe it seems to be more about ocean cargo. It wouldn’t be unreasonable for sail freight to come to mean transporting cargo on rivers (competing with trucks and trains) while sail cargo ends up referring to the ocean.)

Like the ships, these smaller watercraft will likely need some kind of motor for tight maneuvering, emergencies, lack of wind, and to work as their primary power in some canals (similar to the old sail-driven canal barges (sailboats intended to lift dagger boards and drop masts when they get to the canal but able to operate as sailboats outside it). Perhaps these could even operate as trolly boats using overhead wires for power when they get to the canal so they wouldn’t require dense onboard energy storage.
Other types of vessel
This post is mostly about cargo but there’s a ton of sail-based passenger stuff out there. I’ve gathered a few examples and will add more as I find new ones:
A company called Star Clipper is operating three tall ship cruise ships, Star Flyer, Star Clipper, and Royal Clipper. These look like older style clipper ships to me so they might actually be using mostly wind. They seem to be very much operating in the cruise ship format, probably with some associated issues, but they demonstrate that passenger liners could still be viable (and can be quite comfortable) if a change in pace of life or available resources reduces the number of airplanes for that kind of travel.
Seacloud, another sail-based cruise ship
A company called WindStar Cruises also operates a series of cruise-ship-sized ‘motor sailing yachts.’ These have sails but I don’t think these actually rely much on wind, at best I suspect they’re closer to the cargo ships with rotary sails bolted on to save some fuel. One of the naval architects on reddit seemed to confirm this.
There are also smaller crafts such as the 38-meter Schooner Mary Day which can carry 28 passengers. This may be duplicate with the schooner example from the Hudson above, but it still represents the potential for sail-based water buses on both rivers and coasts.
River and harbour cleanup boats like Mr. Trash Wheel (even if you hope a more solarpunk society would have less plastic trash, storms and floods can wash all kinds of non-trash stuff into the rivers).
There’s also the scaled-up version of those (though stopping plastic in the rivers appear to still be the critical part)

The IWSA Small Windships Publication has tons of info on the sub-500GT range of smaller vessels including more info on most of the ships from the examples section (so it would have been really convenient if that was the first thing I found!). You can get a downloadable version here. Developments of Note lists a bunch of goo ships starting on page 10 and Sources for Vessel Plans on page 71 are especially useful but it’s all cool stuff.

Whale Safety
Whales are sometimes hit by ships (they sleep just below the surface and don’t know where human shipping lanes are). Some hulls are more dangerous to them than others. Ships with steep, sharp prows and bulbous bows are especially dangerous for whales. If you search for ship hulls and whale safety, you’ll find an unfortunate number of photographs of dead whales draped over those bulbs.
One suggestion is to follow some cargo ferry designs and design the prow of the ship so it’s more traditional, angled forward so the deck is further forward than where the hull meets the waterline, with no bulb below the surface, and a much more rounded/blunt bowstem. This design will likely lose some performance benefits while underway but if it hits a whale I guess it’s more likely to sort of dunk them rather than to slam into them like an axe.
There are also ongoing attempts to map our whale activity and to ensure that human crews are both aware of their presence and actually making efforts to avoid them, but if you’re looking for visuals this might be worth considering.
